Wow! Records shattered! More people came out to the shop yesterday than any other day before! Thank you so much for all the love and support. We’re going to have the chickens available fresh-never-frozen again today, but we’re back to regular business hours (Tues-Fri 10-3). People have told me the page doesn’t display the hours, so I’ll try to figure out why. Also, I should have mentioned before, the whole chickens are $5.50/lb. If today is anything like yesterday, they won’t last long. (fb)

I remember the goal was to save up enough for a 16-foot cattle trailer. We got a used one with a cut-gate and put chest freezers in one half, crates in the other. The closest poultry plant to us is Misty Lea’s in Pembroke, Kentucky, and for years we drove there once a month, dropped off the live ones and pick up the previous ones frozen. A bunch of great people made that drive with or for us, and I can’t thank them enough. Strange to think we won’t be making that trip anymore. Or at least not nearly as often. Misty Lea’s deserves a ton of credit for all this: they mentored me, sold me a bunch of my equipment, they worked with me and helped me tremendously through it all. I still call them to troubleshoot, especially on long day-drives when an idea comes to mind that I need to work out. They’re the ones that introduced me to air-chilling, and are responsible for much of my farmer’s market spiel: “it’s all about the breeds, the feed, and the processing techniques.” They helped me figure all three of those things out. But the chicken was always frozen, and I had never had one fresh until now. And let me tell you – we’re talking about a completely different level. I couldn't imagine how it could get any better, but I was wrong. Now I understand what the people who do it themselves are talking about. So here’s the deal – Holly agreed to keep the shop open until 5pm tomorrow and we’re going to offer fresh-never-frozen whole chickens for tomorrow (Tuesday) and Wednesday (regular hours) only. After that, they will be frozen. She also made a big batch of her goji-pumpkin seed chocolate bars and chocolate almond granola. See you tomorrow. (fb)
