You can find gems like “El Cocinero Español” by Encarnación Pinedo, the first Mexican-American cookbook produced in the United States, which was published in San Francisco in 1898. Containing nearly 1,000 recipes, Pinedo’s cookbook covers everything from chiles en nogada and various methods of making tomato-based sauces, to preparations for duck, turkey, and dried beef, and even includes a recipe for french fries!
