It's World Baking Day, and what better way to celebrate than with some fresh Strawberry Shortcake Maple Blondies! 🍁🍓 Blondies: 1 1/2 cups flour 1 teaspoon baking powder 1/2 teaspoon salt 1 1/2 sticks unsalted butter 1 cup maple sugar 2 eggs 2 teaspoons vanilla extract 1 cup unsweetened coconut Topping: 1 1/2 cups chopped fresh strawberries 3 Tablespoons maple sugar For topping, combine strawberries and maple sugar in small saucepan. Cook over medium-high heat, stirring occasionally until it cooks down to a jam consistency. Once cool, add additional 1/2 cup of chopped strawberries For blondies, preheat oven to 350°. Line a 7 x 11 baking dish with foil. Whisk together flour, baking powder, and salt in a medium bowl. Beat the melted butter and maple sugar until well combined then add in the eggs and vanilla. Stir in flour mixture and coconut just until combined, careful not to over-mix. Spread evenly in pan. Bake for 18-22 minutes or until toothpick inserted in center comes out clean. Let cool completely on wire wrack. Once cool, spread with strawberry topping. Cut into bars and enjoy! (fb)
