HAPPY FRIDAY FOODS – Potato Pancakes Breakfast/Snack/Lunch/Supper Crediting for Ages 3-5 Total Time: 20 minutes Serving Size: 2 potato pancakes Servings: 7 Components: Vegetable INGREDIENTS • 3. 5 cups shredded hash brown potatoes, defrosted • 1 small yellow onion, finely grated • 2 large eggs • 1/4 cup all-purpose enriched flour • 1 teaspoon salt • 3-4 tbsp vegetable oil DIRECTIONS 1. In a large bowl, add potatoes, onions, eggs, flour and salt.
