University of Tokyo scientists examined how free amino acids, which are key flavor components in traditional meat, change during the cultivation and aging of bovine muscle cells grown in laboratory conditions. The study found that while these flavor compounds decreased when cells differentiated into muscle tissue, they increased significantly during a 14-day aging process at 4°C. Researchers discovered that cultured cells contained higher concentrations of free amino acids per dry weight compared to traditional beef, particularly umami compounds like glutamic acid that contribute to the savory taste of meat.
